Huw Eynon and his son Thomas are 4th and 5th generation butchers. Their business, called Eynon’s based in St. Clears in Carmarthenshire, Wales, has been a proud business partner and supplier of Kuti’s for years and together we won the Tiffin Cup. Huw told us that his 54 years experience in the meat trade has never stopped changing and evolving. His bedrock has been selling niche products that achieve distinctive flavours from selected sheep breeds, without compromise.
Salt Marsh lamb, served in Kuti’s of Southampton, is a seasonal product and is reared with care. Their lamb graze on marshes in the coastline of Wales where the unique vegetation gives the lamb a special flavour in the early part of the spring. This unique flavour cannot be achieved through any enhancers and is what is at the heart of the Kuti’s experience.
